These two recipes are packed with fruity goodness and are so simple to whip together… just 3 ingredients and 5 minutes to make! They’re both dairy-free, antioxidant rich, and you don’t need an ice cream maker to create them.

Every summer I pack my freezer with local fruit. Fresh, seasonal fruit is a treat to enjoy ripe and juicy, but having it to use throughout the year is such a bonus as well. This real fruit ice cream is made often in my house, all year round. It’s a hit with adults and kids alike, and it’s something you can feel good about serving to your little ones. You can try adapting these with any combination of frozen berry or stone fruit you like.

The coconut it contains is especially beneficial for breastfeeding mothers. Coconut has high levels of lauric acid, which helps mothers create breast milk rich in this beneficial medium chain fatty acid. Lauric acid supports baby’s immune system and has powerful antiviral and antibacterial properties.

Peach Coconut Ice Cream

Peaches are a rich source of beta-carotene and the darker the peach’s flesh, the more it contains. Beta-carotene helps maintain healthy skin and plays an important role in eye health.

1 ½ cups peaches, chopped & frozen
1/2 cup coconut milk
1 tbsp unsweetened coconut flakes
* optional: a bit of honey or a few drops of stevia extract

Strawberry Coconut Ice Cream

Strawberries truly shine when it comes to vitamin C. These berries are a fantastic source of antioxidants and they get their deep red color from their impressive combination of phytonutrients. Plus they come in a cute little heart shaped package.

1 ½ cups strawberries, chopped & frozen
1/2 cup coconut milk
1 tbsp unsweetened coconut flakes
* optional: a bit of honey or a few drops of stevia extract

Directions:

Wash and prepare fruit by removing stems and/or pits. Cut the fruit into pieces and freeze overnight. Place the fruit, coconut milk and coconut flakes into a blender or food processor. Blend until desired consistency is reached. Depending on your blender or food processor, you may need to add more coconut milk to assist with blending. Enjoy the sweetness of the fruit on its own, or add sweetener of choice as desired. This ice cream is best served and eaten immediately. Refreezing will cause it to lose its creamy consistency.
