An Ergobaby Holiday with Denise Otico

Hey everyone, it’s Denise here with my two little gobblers! Every Christmas we get together with our family. It is a full house filled with so much gratitude, laughter, and delicious homemade dishes. With the exception of last year, we had a special little present arrive and spent the holiday at the hospital. We had another blessing to be forever thankful for.
Now, it’s not a party without a Yummy Yam Marshmallow Casserole. It is a family favorite of ours. I do have to say that I am not much of a cook or baker. So, this simple recipe I will be sharing is great for everyone! But, we do find our prep time to be longer now with Roz always wanting to “help” and trying to steal marshmallows, while Daslynn wants just as much to be in all the action. I really don’t mind it though. The chaos is what makes the holidays fun. I am thankful for this beautiful mess.
Here are the ingredients and steps to follow:
4 tablespoons melted butter
1 40 oz can cut yams or sweet potatoes
1 16 oz bag marshmallows
1 egg
1⁄2 cup brown sugar
1⁄2 teaspoon cinnamon
1⁄4 teaspoon salt
Heat oven to 350 degrees.
Butter up a 1 quart baking dish.
Mash yams in a large bowl and add in the melted butter, brown sugar, cinnamon, salt, and egg.
You’ll want to mix this well or you can put it in a food processor for a smoother consistency.
Place 1/2 of your mixture in the baking dish.
Put a layer of marshmallows.
Then, add the remaining mixture.
Bake this for 30 minutes.
Remove it from the oven and top it with the remaining marshmallows.
Bake it for another 10 minutes or until marshmallows are lightly browned.
Lastly, get a big serving locked down for you because it’ll be gone!
